“Honey” Cake

Raw honey is a powerhouse, rich in antioxidants, enzymes, and nutrients that support our immune system and overall well-being. It can help soothe sore throats, calm digestion, and even provide natural energy.

However, when honey is heated above 140°F (60°C), many of its beneficial properties break down. At high temperatures, honey loses its natural enzymes and creates a compound called hydroxymethylfurfural (HMF), which, in excess, may have harmful effects on our bodies. When making cakes or stews that require high heat, consider using maple syrup or date syrup (silan), which are more heat-stable. Below is a delicious “honey” cake recipe using clean ingredients.

Ingredients:

  • 2 cups of almond flour
  • 1/2 tsp baking soda 
  • 1 tsp cinnamon 
  • 1/8 tsp ground cardamom
  • A pinch of salt 
  • 1/4 cup unsweetened shredded coconut (optional)
  • 4 small eggs, beaten 
  • 1/4 cup coconut oil, melted 
  • 1/3 cup pure maple syrup 
  • 2 peeled apples, coarsely grated and squeezed well

Directions:

  • Heat the oven to 350 degrees
  • In a bowl, mix all the dry ingredients
  • Add the rest of the ingredients and beat well until a uniform batter is obtained
  • Line an English cake pan with baking paper and pour in the batter
  • Bake for about 35 minutes until the cake is golden and a toothpick inserted into it comes out dry.
